Kelp Noodles

Kelp Noodles

Kelp Noodles are a sea vegetable in the form of an easy to eat raw noodle. Made of only kelp (a sea vegetable), sodium alginate (sodium salt extracted from a brown seaweed), and water, Kelp Noodles are fat-free, gluten-free, and very low in carbohydrates and calories. Their noodle form and neutral taste allow for a variety of uses including salads, stir-fries, hot broths, and casseroles, while their healthful content provides a rich source of trace minerals including iodine, which kelp is well known for. Their unique texture completes the package, making Kelp Noodles a one-of-a-kind healthful and tasty alternative to pasta and rice noodles. Best of all, no cooking is required. Just rinse and add the noodles to any dish and they are ready to eat!

How many calories you ask?

Only 6 calories per serving or 18 calories for an entire bag. Not bad!

How to prepare them?

I personally like to keep it simple. I just drain the water that comes in the bag, and then add hemp oil, tamari, hemp seeds, whole dulse, sea salt, cayenne, and chopped celery and carrots. I stir it up until its pretty coated and then enjoy with chop sticks.  Yum!

Making dressings can be fun too as you get to use your imagination and create your own thai peanut sauce, marinara, and more. Get started with this great miso noodle soup recipe below from my friend Robin at RawketScience:

Creamy Miso Noodle Soup

1 pkg. Kelp Noodles
2 c Almond Milk (or 2 T Almond Butter and water to equal 2 c)
3 T White Miso
1 t Nama Shoyu
1 t Agave
1 t Sesame oil
1 t Sambal Oelek or 1 Chili
½” Ginger – grated
1 Garlic clove – minced
Cayenne to taste
3 c Water
2 Green Onions – thinly sliced diagonally
2 T Red Pepper – finely chopped

Blend all ingredients except noodles, green onions and red pepper in a blender. Soak kelp noodles well in warm water and drain. Place noodles, red pepper, and green onion into warm soup broth and let sit at a warm temperature to soften noodles for 20-30 minutes. Serve warm.

That was a really good post. I'm going to make some of the bad boys. I use powdered kelp at the moment. But I love trying new things!
